Blueberry Walnut Banana Bread

bananeThis is a recipe passed down from my Italian Grandmother, (Campobasso Italy). The smell of fresh bread wafting through the house is a warm/wonderful memory.

This recipe has a lot of fiber due to the Fiber First Cereal content (13 grams), the walnuts & the fresh blueberries make the recipe. This recipe has been slightly modified over the years :).

Note* The bread is not dry if you add the fiber as it is with most recipes, it doesn't change the flavor

It is a "no fail" recipe, it rises perfectly every time!

Ingredients

  • ½ cup of butter
  • 3 TBSP of brown sugar (heaping)
  • 2 eggs
  • 2 mashed bananas
  • 1 tsp of vanilla
  • 1 & ¼ cup of flour
  • *(if you don't want the fiber or the flax/chia seeds you can substitute recipe with an extra 3/4 cup of flour in lieu of)
  • ½ cup of Fiber First cereal ground fine (you can find in any President's Choice grocery) ¼ cup of flax seeds ground fine ¼ cup of chia seeds ground fine
  • 2 tsp of baking powder
  • 4 TBSP milk
  • ¼ TBSP of vinegar and ¼ tsp of baking soda (sours the milk) ½ tsp of salt
  • ½ -1 cup of blueberries
  • ½ cup of walnuts

Cream butter, add sugar until well blended (smooth) Beat 2 eggs, add to butter/sugar mixture Mash banana's well Add banana to butter, sugar & egg mixture & fold in Add vanilla, stir

In a separate small bowl, Dissolve ½ tsp baking soda in milk, add ½ tsp of vinegar Mix well (do not add yet) It will bubble.

In a separate bowl sift 1 ¼ cups of flour Add 2 tsp of baking powder Add all of the ground chia seeds/flax seeds & Fiber First cereal ½ tsp of salt

Alternate, 1/3 of the dry ingredients with 1/3 of the wet ingredients (folding in well) Add 1/3 of the soured milk to the dry/wet ingredients above Continue until all wet/dry ingredients/sour milk are combined Fold in walnuts/blueberries

Pre-heat oven to 350 degrees, cook time 50 minutes (Insert knife or tooth pick to ensure no batter sticks to test) (If batter is not fully cooked, turn off oven and let sit in oven for extra 5 min until fully cooked) Every oven bakes differently

Pour into a greased/floured loaf pan/bake (You can also make muffins using a Standard greased 12 tin muffin pan)

Remove from pan & cool for 20 minutes, Enjoy!
